We use Hampshire trout caught in the gin crystal clear waters of Hampshire’s nutrient-rich rivers to make our smoked pate, fillets whole sides. We prepare, and pin bone the fillets, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory. The result is a gift to the senses: smoked trout pate is richly indulgent, creamy, and chunky, wonderfully succulent smoked fillets, whole sides and whole smoked trout. All with a golden brown glow encouraging taste with its deep and layered smoky aromas.
You can use our Click & Collect service to pick up from us at our unit in Winchester, or any of the Farmers’ markets we attend. Find out where you can find us next here. If you can’t make it to a Farmers’ market we can deliver our smoked trout pate and fillets straight to your door. Please order before Monday midday for delivery the following Thursday or Friday.
For everyone else, we are working with a national courier who can deliver nationwide within 24 hours. Your pate and fish is carefully packed ensuring it stays chilled for the journey.
