Hot smoked trout is cooked as it has to be smoked at higher temperatures, however, cold smoked trout is not cooked. The smoking that is done to cold smoked trout will cure and flavour the trout.

Trout gravadlax is a cured trout. It is cured with, dill, salt, pepper, sugar, horseradish root, zested lemon and a touch of gin for a hint of juniper.
We source all our trout from trout farms in Hampshire, based on the Rivers Test and Itchen.
All our trout are sourced from farms that are also RSPCA Assured. Following a report on trout welfare in 2021, the farms have worked closely with the RSPCA to ensure all fish handling and harvesting procedures are maintained to the highest standards.
The RSPCA standards ensure all animals are reared, transported and slaughtered under higher welfare conditions and have everything required for a better life.
