Description

We use Hampshire trout caught in the gin crystal clear chalk stream waters of Hampshire’s nutrient-rich rivers to make our smoked fillets. We prepare and pin bone the side of trout, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory. The result is a gift to the senses: succulent fillets with a golden brown glow encouraging taste with its deep and layered smoky aroma.

From the judges:

A pleasing, golden brown hue this hot-smoked trout looks moist and succulent. There is a lightly smoked aroma on the nose and on the palate the texture is moist and flaky and the gentle smoke melds with apple and hickory notes which come through well. There is a gentle sweetness to balance the smoke. The flavours are well-balanced and this is indeed a succulent mouthful.

Fantastic looking trout with excellent colour, the aroma gives a very well balanced clean smoke with the gentle trout coming through. The texture is excellent, moist and succulent. This is a very well judged piece of fish – the flavour is so well judged with all the different elements working in harmony, the fish is tasty the smoke and seasoning is adding a very enjoyable further dimension well done.

    This is my favourite hot smoked fish. I think the texture of trout is better than salmon. The smoke level is perfect and it’s quite moist. Local produce too!

    WOW! I bought your hot smoked trout fillet at a Farmers Market and was very pleased with the flavour which was mild not harsh as other smoked fish can sometimes be. The texture was so soft and moist. I just reheated it gently in the pan and served it with new potatoes, tender stem broccoli and carrots, with a little lemon and some horseradish sauce. I’ll be back for more as there are recipes on your website that I’d like to try too.

Free local delivery

We offer free delivery of our smoked trout in the Winchester, Southampton and Portsmouth areas.

On Thursdays, we deliver for free to the following postcodes:

  • SO14, 15, 16, 17⁠, 20, 21, 22, 23, 51, 52, 53

We deliver for free to the following postcodes on the 3rd Saturday & Sunday of the month:

  • SO18, 19, 30, 31, 32, 50

  • PO1, 2, 3, 4, 5, 6, 9, 10, 12, 13, 14, 15⁠

Please order before Monday midday for delivery the following Thursday, 3rd Saturday & Sunday of the month.

Click & Collect

You can use our Click & Collect service to pick up from The Troutlet at our unit in Winchester or any of the Farmers’ markets we attend.  Find out where you can find us next here.

While we always bring a wide variety of our products to the markets, it's always best to order in advance to ensure you get what you want in case we run out on the day.

On checkout, ensure you select the appropriate location to collect your goods from.

We can courier our smoked trout to anywhere in the United Kingdom. Delivery is within 24 hours and the courier is from £6.95. Our pate and fish are specially packed to ensure they stay chilled throughout the journey to you.
