Happy National Pumpkin Day! As the nights draw in and temperatures drop, what better way to celebrate than with something warm, hearty and delicious? Try our autumn comfort food favourite: Roasted Pumpkin & Hampshire Smoked Trout Bake Sweet roasted pumpkin, delicate flakes of Hampshire Hot Smoked Trout, a rich and creamy mustard sauce, and a golden, cheesy breadcrumb topping. What’s not to love? This recipe also celebrates fantastic local producers, bringing together wonderful ingredients from Hampshire and beyond: • Butler Country Estates | Hampshire Hot Smoked Trout • @twoandoneoliveoil | Olive Oil • @lyburnfarm | Old Winchester Cheese • @hoxton_bakehouse | Artisan Breadcrumbs • Cross Valley Milk Ltd | Double Cream • @durleighmarshfarm | Pumpkins Hampshire Fare Serves 4 | Ready in approximately 1 hour Ingredients: 700g pumpkin, diced 250g Hampshire Hot Smoked Trout, flaked 1 leek, sliced 2 garlic cloves, crushed 200ml Briddlesford Farm double cream 100ml vegetable stock 1 tbsp wholegrain mustard 100g Lyburn Old Winchester cheese, grated 50g breadcrumbs Two & One olive oil 1 tsp thyme Zest of ½ lemon Black pepper Method: Roast the pumpkin with olive oil, thyme and black pepper at 200°C for 25 minutes. Soften the leek in olive oil, add the garlic and cook for 1 minute. Stir in the cream, stock, mustard, lemon zest and black pepper, then simmer for 3–4 minutes. Combine the pumpkin, smoked trout and leeks in an ovenproof dish. Pour over the sauce, top with grated cheese and breadcrumbs, then bake at 200°C for 20 minutes until golden and bubbling. Serve with seasonal greens and crusty bread.
