Whole Hampshire Smoked Trout


We use Hampshire trout sourced in the gin crystal clear waters of Hampshire’s nutrient-rich rivers to make our whole smoked trout. We clean, gill and gut the whole trout, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory. The result is a gift to the senses: succulent whole trout with a golden brown glow encouraging taste with its deep and layered smoky aroma.
