Hampshire Smoked Trout Fillets


We use Hampshire trout caught in the gin crystal clear chalk stream waters of Hampshire’s nutrient-rich rivers to make our smoked fillets. We prepare, and pin bone the side of trout, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory. The result is a gift to the senses: succulent fillets with a golden brown glow encouraging taste with its deep and layered smoky aroma.
