WOW! I bought your hot smoked trout fillet at a Farmers Market and was very pleased with the flavour which was mild not harsh as other smoked fish can sometimes be. The texture was so soft and moist. I just reheated it gently in the pan and served it with new potatoes, tender stem broccoli and carrots, with a little lemon and some horseradish sauce. I’ll be back for more as there are recipes on your website that I’d like to try too.
